Assam has been enhanced in Taiwan and is now called TTES No. 8. So, it has different characteristics than Indian Assam, the original Assam cultivar. Taiwanese Assam releases less bitterness and less astringency than its Indian equivalent. TTES No. 8 is also much butterier and smoother. And its hint of sweet and sour flavor epitomizes the features of high-quality Taiwanese black tea.
